You can drive yourself or hire a minibus driver. Make your own tour! Ask the minibus driver to take you to the Hunter Valley (drink as much as you want!) or to the Blue Mountains or wherever. Stay as long as you want at each location. Stop for lunch when you want. If you see something you like, ask the driver to stop and have a look.
